I made this recipe last night. So far I have cooked and/or baked 28 different recipes this month and I truly believe this must be the best one. Why? Most nights I only had one beggar sitting at my feet, Jovi. It is not really surprising as Jovi usually finds herself a spot near me where ever I am. But this night I had both Boomer and Jovi sitting and staring at me as I consumed my beer soaked grilled cheese. It is rare that I ever let the dogs lick my plates after I am done eating but on this night I let them. It appeared to be a stare down between the two dogs as they quickly licked around the plate as fast as they could to beat the other one to the buttery, cheesy remnants that I had left behind.

For this recipe you will need the following:
1 cup nutty, brown ale ( I used Newcastle Brown Ale)
1/8 cup flour
1/2 teaspoon salt
1/4 teaspoon chili powder
12 slices sourdough bread (1/2″ thick slices)
6 oz mild or sharp cheddar cheese (sliced)
2 tablespoons butter
Start with making the beer batter. Add in a shallow bowl the eggs, beer, flour, salt and chili powder. Whisk to combine.
Next add the bread to the bowl, allowing it to soak in the mixture. Soak both sides of the the bread. Place the bread on a plate and add slices of cheese, covering the entire piece of bread. Repeat with the second piece of bread, including the cheese. Sandwich the two pieces of bread together.
Last step is to add two tablespoons of butter over medium-high heat to a frying pan that will fit the size of bread you used. Wait for the butter to melt and then add the sandwich to the pan. Cook for about 3 to 4 minutes on each side or until the bread is browned and the cheese is sufficiently melted. I went with a classic grilled cheese but you can add in all kinds of toppings such as bacon, other assorted meats or a tasty avocado!
