I get a lot of suggestions from friends on what beer inspired foods I should make. I never mind the suggestions – in fact it saves me from having to hunt down new recipes 🙂
I threw together a quick party and had the main course and dessert covered but I needed an appetizer. After a few ideas thrown my way I settled on Buffalo Beer Cheese Fries. I am warning you now – if you make these note that they will be gone in a matter of minutes and you will want more as soon as the plate has been devoured.

The ingredients you will need are:
3 tablespoons butter
3 tablespoons flour
1 cup beer
½ cup milk
6 ounces monterey jack shredded
4 ounces pepper jack shredded
¼ cup Frank’s red hot sauce (I used the Franks Buffalo Sauce)
½ teaspoon salt
½ teaspoon black pepper
1 bag (16 oz) frozen French fries (I prefer steak fries as they are able to hold the weight of the toppings)
½ cup green onion chopped
¼ cup blue cheese crumble
¼ cup fresh cilantro chopped (I omitted this as I can’t stand cilantro and no one seemed to mind that it wasn’t there)
You will want to start with baking the fries as it will be the longest task for this recipe. After you get the fries in the oven use a medium sauce pan and start to melt the butter.
Add the flour and mix using a whisk until there are no clumps. Next add the beer and then the milk, whisking into the butter/flour mixture.
You will then add the hot sauce, salt, pepper and cheese. Make sure to add the cheese in small amounts to prevent clumping.
Once the fries are baked lay out a single row of fries on a plate and drizzle the cheese sauce over them adding the green onions, cilantro (if you choose to add this) and the blue cheese crumble. Keep layering the fries and sauce as you would nachos and once you have a substantial pile ‘o fries on your plate dig in!
