Spent Grain Cookies

I make spent grain dog cookies for Boomer all the time. Boomer and all his dog friends like them so much that I have even started working on a business so I can start selling them. Not only do the dogs love the spent grain cookie but so do their pet owners! Some have tasted them and admit they are pretty good. I personally find them a little on the dry side, but hey, whatever floats your boat!

I went on a hunt for spent grain cookies for humans as I had pretty much nailed the dog spent grain treats. I did not have to go far as I found a recipe on Deschutes Pub Recipes for spent grain cookies.

Ingredients you will need:
2/3 Cup soften butter
2/3 Cup brown sugar
2 large eggs
1 ½ cup of spent grain
1 ½ cup flour
1 tablespoon baking soda
½ teaspoon of salt
1 cup of dried cranberries
1 cup white chocolate chips (the original recipe called for 2/3 cup; I recommend adding a full cup as the chips were a little sparse.)

Preheat your oven for 375F degrees

In your stand mixer combine the room temperature butter and sugar until they are light and fluffy.
Next add the eggs and mix until combined.
In a separate bowl add the dry ingredients: grain, flour, baking soda and salt
Take your dry mixture and add it to your wet ingredients. Mix until well combined

Next fold in the chocolate chips and cranberries.
Lastly grab your cookie scoop and place the cookies about 2” apart on a ungreased cookie sheet.
Bake for 10 to 15 minutes.

The cookies turned out excellent. I had expected a denser cookie like an oatmeal cookie but these cookies turned out light and fluffy and the chocolate chips and dried cranberries were a delightful addition.

Give these tasty cookies a try and let me know what you think in the comments!
